INGREDIENTS:
1 1/2 cups uncooked short-grain white rice 2 mangos, peeled and sliced 2 cups water 3/4 cup sugar in the raw, or to taste (can substitute honey) 1 (10 ounce) can cream of coconut (optional) |
DIRECTIONS:
1. | Combine the rice and water in a saucepan. Bring to a boil, then cover and reduce heat to low. Simmer for 15 to 20 minutes, until water is absorbed. |
2. | Mix the desired amount of sugar into the hot rice. Portion the rice into 4 bowls. Top with mango slices, and pour some cream of coconut over the top of each bowl. |
