Kale Apple and Orange Salad

 

4 – 5 cups Kale de-stemmed and sliced

1 apple cored and chopped

¼ cup sunflower seeds

¼ cup pumpkin seeds

¼ cup sliced almond

Dressing

2 tblsp greek coconut yogurt

1 tblsp organic coconut milk

1 tblsp apple cider vinegar

1 ½ tblsp honey

2 tsp orange zest

1 tblsp organic extra virgin olive oil

Combine dressing ingredients and blend. Set aside.

Place kale in bowl and add dressing. Massage the dressing into the kale. Add all other ingredients and toss to mix. Serve and enjoy!
